Makes about 20-24 cookies

Recipe barely tailored from these and  Minimalist Baker

I make these fairly small so I can pack them in a lunch field, or use them for vegetable consuming negotiations with out bracing for a sugar excessive. They need to be saved within the fridge as they disintegrate and the coconut oil melts at room temperature. I am going to make them with out the cocoa dip for packed lunches to keep away from the mess.

1 cup pitted dates
1 cup quaint oats
half of cup unsweetened seed butter
1 Tbsp. chia seeds, elective
pinch of salt
pinch of cinnamon

chocolate glaze:
three T. coconut oil, to a liquid
1 Tbsp.. maple syrup
three T. cocoa powder

Put the dates and oats in a meals processor and pulse a dozen instances till effectively chopped and sticky. Add the seed butter, chia seeds, pinch of salt and cinnamon, and pulse a number of extra instances. If combination appears to be like dry and crackly, add a splash of water or coconut oil, and pulse once more till mixed.

Line a plate with parchment paper. Roll the combination into small, tablespoon-ish, sized balls. Press the facilities down with the tins of a fork, cross hatched if you want. Refrigerate for an hour or in a single day.

In a small bowl, stir collectively the coconut oil, maple and cocoa powder. Dip the chilly cookies, midway, into the cocoa combine. Exchange them again on the plate and refrigerate once more to sit back. Maintain them saved within the fridge till able to eat.
